The 4th of July is coming up FAST! Everything edible is turning red, white and/or blue ๐ I’m not gonna lie…I LOVE getting into the holidays. Doesn’t matter what it is, I feel it necessary to throw a party. May is the International Respect for Chickens Month. Forreals. Google it. It’s marked on my calendar.
It’s marked on yours too? NO WAY!!!ย It’s like one mind, you and I.

Anyways, I’ve had some berries and leftover pie crust loitering around my fridge for the past few days and I finally decided to slap them silly and turn them into a pie. And by pie I mean galette. And by galette I mean a fancypants-easy-to-make treat. It looks and sounds cool, but is approximately 14.2 times easier to whip up than pie. Conveniently, the berries I used were red and blue. {Holla!} So, moral of the story: I win at life.ย ย Happy 4th, yo.
Here’s how to do it:

Toss some raspberries and blueberries together with some flour, sugar and a teensy bit of salt. Really any fruit would work for this, but the 4th of July calls for blue and red! Also, you’ll need to adjust the amount of sugar and flour if your fruit seems particularly juicy or tart. Just a heads up.
Pour the berries onto a prepared pie crust leaving a 1-2 inch border. I like this recipe a lot, but the store bought ones work great as well as any other pie crust.
Fold up the extra dough to create the galette. Isn’t it purdy? But wait…..THERE’S MORE!
Take some extra pie dough and cut out little stars and place them over top of the berries. Talk about patriotic ๐
Brush all the pie crust with a little milk and bake!
20 minutes later, you’ll be in double berry heaven….one of my favorite places ๐

Double Berry Galette
Ingredients
- 1 pie crust unbaked, I used this recipe
- 1 1/2 cups fresh raspberries
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup all purpose flour
- 1/4 cup granulated sugar adjust based on how sweet your fruit is
- pinch of salt
- milk
Instructions
- Preheat oven to 350 degrees. Cut about 2 tablespoons of pie dough off of the rest of the pastry and set aside. Roll out remaining pie crust just as you would to make a pie. Place pie crust on a baking sheet lined with parchment paper or silicone baking mat. Set aside.
- In a large bowl, gently combine the berries with flour, sugar and salt. Pour into the center of the pie crust, spreading the berries evenly leaving a 1 1/2 inch border. Fold up the sides to create the galette.
- Roll out remaining dough and cut out stars with small cookie cutters. Place stars over top berries.
- Brush edges and stars with milk. Sprinkle additional sugar over top if desired.
- Bake 20 minutes or until crust has browned and berries are bubbly. Cool at least 15 minutes before cutting. Serve with whipped cream or vanilla ice cream.
