Off we go again! Today, we are embarking on our journey back to Oregon, but we’re making a quick pit stop in Salt Lake to see friends and then another stop in Boise to get some family photos taken. So even though today is Monday, we’re not going to make it home until Wednesday {which I hope comes really soon! I miss my bed….and kitchen….}

Brooke of course is completely broken hearted and slightly devastated because she needs to leave her cousins, but thankfully the gifts my Mom brought her softened the blow.

Gord and I definitely have stayed up too late this entire week and a half, therefore making us arrive home exhausted and overall tired. Being with family, going from activity to activity and not getting a full nights rest {thanks to a teething toddler you happen to be sharing a room with} doesn’t add to the whole tranquil vibe a vacation is supposed to impart.

Nonetheless, we’ll make it home eventually and then go back to living our regular Oregon lives.

ANYWAYS. Today’s recipe is brought to you by my addiction to carbs and cheese.

And bacon.

I made these sandwiches a few weeks ago, knowing full well that I was likely to eat my own, half of my daughters and a few bites of my husbands’. {They must really love me stealing their food 24/7.} The mixture of cooked bacon with melty cheese, creamy avocado, peppered turkey, buttered bread and fresh tomatoes on fresh french bread  is out of this world. This isn’t a hard recipe AT ALL, {its more like a method} but the taste is really hard to beat.

Here’s how to make it:

Start by grabbing a knife-wielding child and get him/her to start buttering some slices of french bread.

While that is happening, mash some avocado, slice some tomato, cut some cheese {no, not like THAT} and….

Cook some bacon. I like to crisp mine up quite a bit because it’s a serious pet peeve of mine to bite into a sandwich and pull out an entire strip of bacon because it was too chewy. NO THANK YOU.

ANYWAYS, once your bread is buttered and your ingredients are arranged, its time to pull these sandwiches together. Basically, you want to layer everything together with the cheese touching the bread:

like so! As long as the cheese is flanking the bread, the rest of the order doesn’t matter.

After you brown the sandwich on either side and the cheese gets all melty, your sammie is finito.

Cut it in half and voila! LUNCH. Or dinner. Or snack. I’m not biased.

Grilled California Club Sandwich

Grilled California Club Sandwiches are out of this world. Bacon with melty cheese, avocado, peppered turkey, buttered bread, and fresh tomatoes!

Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 8 slices slices fresh french bread 3/4 inch thick
  • 8 tbsp softened butter 1 tbsp per slice of bread
  • 8 slices tomato
  • 8 slices white cheddar cheese
  • 8 cooked bacon
  • 16 thin slices deli pepper turkey
  • 1 ripe avocado mashed

Instructions

  • Preheat griddle to medium low heat. Butter outsides of bread pieces and stack sandwich in between bread with butter facing the outside. Be sure to have the cheese slices flanking the insides of the bread.
  • Cook on the griddle 3-5 minutes per side or until bread has toasted and cheese has melted. Repeat on other side. Remove from heat, slice and serve.
