This healthy, Cheesy Turkey Chili Mac Recipe is such a fun twist on chili and is SO good! Topped with Fritos and sour cream!

Hellooooooooo! Happy Wednesday, friends! Have I got a great recipe for you today: Cheesy Turkey Chili Mac–basically a healthy version of chili with a little pasta and a whole lot of melty cheese. I love substituting ground turkey in for ground beef. It saves you a bunch of calories and fat, plus I usually don’t miss the beef! Some might call me a Turketarian. Do you like using turkey as part of your healthy lifestyle? Do you like to incorporate turkey into family meals? Well, odds are if you answered yes, then you’re a Turketarian too!

For the next few months, I’ve partnered with Butterball to bring you delicious and flavorful recipes you will love. I don’t know about you, but whenever I think of Butterball, I just think of my Thanksgiving turkey. But, did you know Butterball has a whole bunch of other products? I’ve been using them all in my kitchen and let me tell you, there are some seriously delicious ones! I’m in the process of testing recipe after recipe to share with you guys! The first one up is this Chili.

I used fresh ground turkey from Butterball plus a bunch of veggies like onions, garlic, carrots, zucchini and corn to bulk it up a bit without adding any extra fat or calories. Overall, a filling, easy and delicious meal your family will love!

Here’s how you make it: Start by chopping up some onion. Get this into a large pot so it can sauté in a little olive oil. Now you can grab your Butterball Ground Turkey and get that into the pan too. While that is cooking away, chop up some carrots and zucchini. Told ya this was healthy! Chop some garlic too! Once your veggies are prepped, add them into the hot pot to cook a few minutes. Next thing to add in is just a bunch of canned goodies: black beans, garbanzo beans, diced green chiles, diced tomatoes, and tomato sauce. Stir those ingredients all together and then add your chicken stock and spices. Stir, bring it to a boil, reduce to simmer and add in your pasta and corn. I used gemelli pasta, but any short cut pasta will be fine. Cook everything together until the pasta is cooked, then divide into bowls and sprinkle on a bunch of cheddar cheese to melt.

Hello, cheesy goodness! I added on a few Fritos, sour cream and chopped basil. Suuuuuper yummy and we had plenty of leftovers 🙂 It’s the perfect meal for a crowd! Pick up some Butterball turkey and make this tonight!

Cheesy Turkey Chili Mac Recipe

This healthy, Cheesy Turkey Chili Mac Recipe is such a fun twist on chili and is SO good! Topped with Fritos and sour cream!

Ingredients

  • 2 tablespoons olive oil
  • 1 lb. Butterball ground turkey
  • 1 medium onion diced
  • 4 large carrots peeled and chopped
  • 1 small zucchini diced
  • 1 clove garlic minced
  • 1 can black beans drained and rinsed
  • 1 can garbanzo beans drained and rinsed
  • 7 oz. fire roasted mild green chiles 1 can
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 1/2 tablespoons ground cumin
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon ancho chili powder
  • salt & pepper to taste
  • 1 1/4 cups frozen corn
  • 1/4 cup short cut pasta such as gemelli
  • 2 cups cheddar cheese

toppings:

  • fritos if desired
  • cilantro if desired
  • basil if desired
  • sour cream etc., if desired

Instructions

  • In a large pot, saute onions in olive oil over medium-high heat. Stir in ground turkey and break apart using a wooden spoon. Continue cooking until thoroughly cooked.  
  • Stir in carrot, zucchini, and garlic. Cook another 2 minutes or so. Pour in black beans, garbanzo beans, green chiles, tomato sauce, diced tomatoes, chicken broth, and spices. Stir and bring to boil. Simmer 5 minutes.
  • Then add in corn and pasta. Simmer 15 minutes or until pasta is cooked. Divide into bowls and top generously with cheese to melt. Finish with any remaining toppings and serve.

    I made this last night as nd it was really good. Used 1.25pounds Turkey and8oz csn tomato sauce since the directions don’t specify. Was a little spicy but the grownups loved it. The kids were just ok. Will make again.
