Homemade Cream of Chicken Soup

Making your own cream of chicken soup is so good and easier than you think! You probably have most of the ingredients in your pantry already! If you are in a pinch and want to use store-bought canned soup, that’s totally fine! Just make sure to add in enough liquid to get up to 2 cups. So 1 can of soup + water/milk/liquid of choice equal 2 cups…make sense?

What is Bouillon Paste?

Chicken bouillon paste is similar to bouillon cubes but in a paste form. It’s found in jars right next to the boxes of chicken stock. If you don’t have this ingredient, simply use either powdered or cubed bouillon (enough for 2 cups of liquid according to directions on the packaging) OR 1 cup of chicken stock instead of water and add an extra 1/2 teaspoon of poultry seasoning.

1. Make the Condensed Cream of Chicken Soup

Melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. The sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside.

Pro Tip: You can alternatively use canned cream of chicken soup. Just make sure to add in enough liquid to get up to 2 cups. So can of soup + water/milk/liquid of choice equal 2 cups.

2. Add Everything to the Crockpot

Place the hashbrowns, smoked sausage, onion and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot.

How to Serve Hash Brown Potato Casserole With Smoked Sausage

Add a little more cheese to melt over the top once you’re ready to eat! Do you see what I mean by easy? Serve hot.

Storing Crockpot Hashbrown Casserole

Any leftovers you have should be cooled to room temperature and refrigerated in an airtight container for up to 5 days. To reheat, simply portion out the amount you need then pop into the microwave until heated through, occasionally stirring.

How to freeze Sausage Hash Brown Casserole

Luckily for you, this dish freezes well for even longer storage. Allow casserole to cool to room temperature. Store in a freezer-safe, airtight container and into the freezer for up to 3 months. To thaw, allow to sit in the fridge overnight before portioning out and reheating.

Why is my hash brown casserole mushy?

If your hash brown casserole is mushy, you’ve either cooked it too long or stirred it too much. Ensure that you follow the recommended cooking time and temperature specified in the recipe.

Do I have to thaw frozen hash browns for casserole?

For this preparation in the crockpot, you do not need to thaw your hash browns since they will be cooking low and slow for a few hours. If you are in a hurry, I would suggest thawing them to speed up the cook time.

Crockpot Smoked Sausage Hash Brown Casserole

  • 14 oz smoked sausage diced

    Well, I don’t have the ingredients to make the homemade cream soup but I do have a can each of cream of chicken and cream of potato soup. I beat that would be tasty as well and not be overwhelmingly chicken flavored. I want to taste the sausage too! Options?

    Amazing recipe. I’m going to try it with Zoodles! For the flight, bring Vicks vaporub to put under your nose. Take some anti-gas the night before your flight plus the anti-gas & an Advil a couple hours prior to flight. Wear a sports bra and loose clothes, bring your own small pillow, slippers or flip flops, heavy socks, earplugs, sleep mask & a small fleece blanket (unless u are in 1st class). After your dinner meal, they start to turn the lights down. A small glass of wine, if you want with dinner. Go brush your teeth, then put on socks, place slippers underneath seat (in case u need to get up later), apply Vicks under nose and a dab of Chapstick on lips, hand lotion & face cream. Put on mask, earplugs & blanket, slightly turn on left side and lodge pillow where it’s comfortable. Sleep as long as u can. When it’s breakfast time, use bathroom to freshen up with some face & body wipes, slip into a simple dress & flats, put on red lipstick and get off that plane! I braid my hair before I go to sleep, and fluff when I get up & put in a French twist or bun. It’s Paris, after all!

    I think if you want to try a healthier version you could use either spaghetti squash or shredded zucchini instead of the potatoes and the kids would never know the difference.

    Hi Lauren! My OH has requested that I make this recipe for him! However, I’m having one small issue – frozen Hash Browns of the sort that you use are not available in my country! We only get frozen hash browns that are pre-formed into patties. Do you think I could just cube up some waxy potato and use that instead? Should I pre-cook this in any way? Or does it really have to be frozen cubed hash browns? Sorry for the awkward question!

    Tried this tonight per my daughter’s request. It was good however the thyme & poultry seasoning was over bearing in the soup. Will definitely cut back on them next time I try it.

    This is an excellent recipe and thanks for posting. I didn’t have all of the exact ingredients so I used potatoes O’Brien and pepper jack cheese. I cook on low for about six hours . Delicious .

    Did you know that there are liners for crockpot you can buy them in grocery stores, that way you do not have to scrub the pot. I just discovered this. You can lift the food right out of the pot and pot is clean. Check it out
