- chicken bouillon paste
- seasonings – Salt, Pepper, Thyme, Poultry Seasoning

Homemade Cream of Chicken Soup
Making your own cream of chicken soup is so good and easier than you think! You probably have most of the ingredients in your pantry already! If you are in a pinch and want to use store-bought canned soup, that’s totally fine! Just make sure to add in enough liquid to get up to 2 cups. So 1 can of soup + water/milk/liquid of choice equal 2 cups…make sense?
What is Bouillon Paste?
Chicken bouillon paste is similar to bouillon cubes but in a paste form. It’s found in jars right next to the boxes of chicken stock. If you don’t have this ingredient, simply use either powdered or cubed bouillon (enough for 2 cups of liquid according to directions on the packaging) OR 1 cup of chicken stock instead of water and add an extra 1/2 teaspoon of poultry seasoning.

1. Make the Condensed Cream of Chicken Soup
Melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. The sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside.
Pro Tip: You can alternatively use canned cream of chicken soup. Just make sure to add in enough liquid to get up to 2 cups. So can of soup + water/milk/liquid of choice equal 2 cups.

2. Add Everything to the Crockpot
Place the hashbrowns, smoked sausage, onion and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot.

Add a little more cheese to melt over the top once you’re ready to eat! Do you see what I mean by easy? Serve hot.

Storing Crockpot Hashbrown Casserole
Any leftovers you have should be cooled to room temperature and refrigerated in an airtight container for up to 5 days. To reheat, simply portion out the amount you need then pop into the microwave until heated through, occasionally stirring.
How to freeze Sausage Hash Brown Casserole
Luckily for you, this dish freezes well for even longer storage. Allow casserole to cool to room temperature. Store in a freezer-safe, airtight container and into the freezer for up to 3 months. To thaw, allow to sit in the fridge overnight before portioning out and reheating.

Crockpot Hashbrown Casserole FAQ
If your hash brown casserole is mushy, you’ve either cooked it too long or stirred it too much. Ensure that you follow the recommended cooking time and temperature specified in the recipe.
For this preparation in the crockpot, you do not need to thaw your hash browns since they will be cooking low and slow for a few hours. If you are in a hurry, I would suggest thawing them to speed up the cook time.

Ingredients
homemade cream of chicken condensed soup
- 1 tbsp butter
- 2 tbsp flour
- 1 cup water
- 1 cup whole milk
- 2 tsp chicken bouillon paste*
- 1/2 tsp thyme
- 1/2 tsp poultry seasoning
- salt to taste
- black pepper to taste
plus:
- 32 oz hash browns 1 bag
- 14 oz smoked sausage diced
- 1 small onion diced
- 1 1/2 cups cheddar cheese grated + more for right before serving
- 2 tbsp chives fresh, chopped for garnish (optional)
Instructions

I might try this as a brunch recipe. Instead of soup, use eggs scrambled for liquid, plenty of cheese. Even might slip in a few fr[zen vegetables.

I double the amount of smoked sausage so there’s a more equal amount of meat to cheese and there’s still plenty of cheesy sauce to cover all the extra meat and cheese. I make something similar that is a dish. The hash browns are frozen and cook 4 to 5 hours on low. I would think thawed ones would become mushy if cooked on high for 3 hours. I would use 2 cans of cream of chicken w8th no added liquid and brown sausage with onions first to do flavor. Adding some Cajun seasoning when browning sausage might be good too.
This is great. But one question, can this be made in a 9X13 casserole dish in the oven?

Try using cubed, raw potatoes instead of the premade, precooked hash browns.Or don’t cook it as long. Some crockpots are much hotter than others.
Have you tried to Brown the potatoes in a pan prior to putting the ingredients together?

I made it tonight for dinner. I used turkey sausage, diced hash browns w/ peppers & onions & fat free cr. of chicken soup (oops, didn’t read the part about adding water, but it turned out just fine without the extra liquid). I steamed some broccoli in the microwave & stirred it into our individual servings. By steaming it separately & adding it later, it didn’t get mushy. So, yummy & made it more healthy by adding the turkey sausage & broccoli! Super easy & quick! My husband put it all together when he got home from work & it was ready to eat when I got home!

I would suggest maybe cheddar cheese soup as a substitute for cream of chicken and the cheese. I make a cheesy potatoes recipe and it has 1/4 cup melted butter, 16 oz sour cream, onions, hasbrowns, and it is really good. I never thought of smoked sausage added but seeing this I may try it and try this one, too.
