The meat in these Cuban Pork Sliders is so flavorful and delicious. These are a perfect size to serve at a baby shower or bridal shower.

First item of business: Happy Monday! Second: daylight savings killing me!!! UGH! –> that’s exactly how I feel about it. Who’s idea was it to skip an hour in the middle of the night?ย I would like to strangle them.ย Losing sleep is never a good idea, ok. NEVER. Lucky for me….and you I’ve got something to turn your frowns upside down!
Surprise to Brooke from Baking with Basil on your virtual baby shower! Brooke was pregnant with twins, but just recently had her beautiful baby boys! {Congratulations!} Brooke and I met in Nashvilleย when she was barely showing her little bump off. I didn’t know she was having twins ’til a while later and that’s when I started to blog stalk her. One day on Twitter we were talking about babies and weight when she told me that she had gained 30 pounds while being pregnant with 2. Ummm….
Can you guess how much I gained after growing just 1 baby? Actually, never mind. That’s not important.
What IS important is baby shower food! ๐ And since I’m a part of this virtual part-ay, I couldn’t come to the table empty handed. So, I made some darling little baby Cuban Pork Sliders. The key to baby shower food is making delicious food in miniature form. Do that, and you’re golden.
Since I got this gorgeous pot from my friends at Le Creuset {hint hint} I thought I’d make some pork for these mini sandwiches. Super easy and super delicious! Here’s the step-by-step:
The first thing to do is get some spices and seasonings together in a bowl. I have all of these on hand all the time. Cumin goes into anything Mexican and oregano is very Italian.
So once all of that is measured, grab a pork roast {technically a pork loin} and get sprinkling.
Pour the seasoning overtop and rub it all in.
Now we’re going to sear the meat in a little olive oil.
I didn’t quite take photos of this process, but you’ll get the idea. See the brown meat? That’s from the searing. Once you get the sides all brown and tasty, toss in some chunky onion pieces, some smashed garlic cloves, slices of lemon, bay leaves and chicken broth. Cover this and simmer or 250 degree oven for 1-2 hours, depending on how large your roast is. Let me take the time to warn you that this stuff is going to smell AMAZING.
Once it’s thoroughly cooked, we’re going to Remove the roast to a plate and cover with foil to rest.
After a few minutes, slice the meat up pretty thin and build your sliders.
Make sure you buy some or make some of these cuties!! My recipe is here.
Into my slider, I put lettuce, pork, provolone cheese, pickles, hot pepper rings and mustard. OMG….life changing!! A tangy, salty and cold bite! Mmmm…..
Feel free to make these into regular sized burgers or sandwiches. And, traditionally there is deli ham on there as well but I didn’t have any on hand. Switch it up however you like! ๐

The sliders look delish. I do like that yellow color, but green is my favorite color so I’d probably choose Fennel.
