Chocolate Fudge Cake Mix Cookies… Every day is appropriate for cookies. Especially super soft extra chocolatey cookies. I think crispy cookies should be illegal, and these ones are the complete and total opposite of crunchy. They bake up soft and STAY soft for days. Basically, the epitome of everything that is right with the world.

Main Ingredients Needed

So, I just wanted something quick and easy since I was trying to get these made before Gordon had to catch his train back to DC….hence a cake mix cookie. But ohhhhhhh myyyyyyy were these amazing. So much so that I wanted to share them with you. This is mostly not my recipe but here are the ingredients to get you started:

  • Betty Crocker Chocolate Fudge Cake Mix – In full disclosure, I used a cake mix for this cookie recipe and adapted it slightly from a recipe on the box because every cake mix is a different weight and what works for one mix doesn’t work for the next. So get the Betty Crocker Chocolate Fudge Cake Mix!
  • Canola or Vegetable Oil – I suppose you could use melted butter in place of the oil, but I haven’t tested that recipe and can’t guarantee your results, though I’m 89% it would be just fine 😉
  • Vanilla – to balance out the chocolate flavor.
  • Eggs – for a soft texture.
  • Chocolate Chips – I did add in chocolate chips though to make it extra chocolatey for Gordie.
  • Sugar – Rolling the dough balls in sugar is also optional, but I do really enjoy that added element, plus it was a good activity for my 8-year old to do Sunday afternoon.

Tips and Tricks

Size. You can use a different sized cookie scoop to make smaller or bigger cake mix cookies. Just make sure you adjust the baking time accordingly.

Ice Cream. These cake mix cookies go so so so SO well with vanilla ice cream. Soft, chewy, chocolatey mixed with smooth, creamy and sweet.

How to Make Cookies From Cake Mix

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. In a large bowl, stir cake mix together with oil, vanilla, eggs, and chocolate chips. Refrigerate 30 minutes or until firm enough to roll and have the dough not stick to your hands
  3. Scoop dough into 24 even balls and roll in granulated sugar. Place onto prepared baking sheets and bake 8-10 minutes.
  4. Remove from oven and cool 4 minutes before removing to a cooling rack. Enjoy warm or at room temperature.

Leftovers

These cake mix cookies can last for up to 5 days sealed in an airtight container. They’ll last even longer stored in the fridge.

Make-Ahead

Refrigerate. You can refrigerate the dough for up to 2 days before using it. Roll in sugar then store in the fridge. Then simply bake as usual when you’re ready.

Freeze. These cookies can be frozen for up to 2 months. Store the cookies in an airtight container or freezer bag, then when ready to eat thaw at room temperature.

Undercooked?

Yes, I know the last picture looks like the cookie is not cooked all the way, but I did snatch this right off the pan, fresh out of the oven and a lot of the inner shininess is from melted chocolate chips. I’m not saying it was but even if it wasn’t cooked all the way, I’d still eat it. If you don’t like that or think it’s gross, then we can’t be friends. #cookiedoughforever 

To be clear and so I don’t get sued, I’m not recommending you consume anything with raw eggs in it. I’m just telling you what I do. You do you, buttercup 😉

    These cookies are delicious! Just coming to the recipe to leave this review makes me want to make some more! I made these over the holidays along with her Gingerdoodles (which are AMAZING and you should definitely make RIGHT NOW) and they were delicious. The consistency was chewy, fudgy and perfect! I will definitely make these again.

    Wow this was too easy and too good! I made the mistake of adding the sugar in with the mix. So in the end, I didn’t roll all of the cookies in the sugar, but no one complained that it was too sweet so I didn’t bother to bring it up. 🙂
