Jalapeno Artichoke Dip

A few months back, my sister-in-law, Emily brought this Jalapeno Artichoke Dip to a family dinner and I became OBSESSED.  After eating almost the entire containers worth, I decided to look at the ingredients to see if crack was the first thing listed I could recreate it at home. Sure enough, all the ingredients were legal, straight forward, and I had them all at home. Brilliant!!

Except then I completely forgot…..until yesterday. I have a bad memory. CLEARLY. I was at Costco taste testing hummus and seed crackers {or something else that wasn’t like crackers but involved a lot of seeds?!} when I saw approximately 1.4 million containers of Jalapeno Artichoke Dip. Pretty sure I audibly gasped and scared a few fellow shoppers. I looked over the ingredients again and had them all on hand AGAIN. It was a sign. So I went home, made this, ate it all and rubbed my belly. –>truth

Ok, so you want to know how to make it, yes? Well, get ready to work! And by work I mean open a few jars and call it a day.

Jalapeno Artichoke Dip

Start out by chopping up a few marinated artichoke hearts in a food processor. You just want them chunky and not too small. This dip needs texture which the artichokes give.

After that, throw in some cream cheese, mayonnaise, parmesan cheese, salt, pepper and a little splash of water {if needed} and blitz again.

After everything is mixed, you can spoon this whole thing into a different bowl because…

I wanted to stir in the chopped jalapenos by hand. It keeps the dip less spicy. If you like a lot of heat, throw those babies right in with everything else. No biggie.

Serve this with veggies, bread, chips, a shoe, whatever. It tastes amazing on everything 🙂

Jalapeno Artichoke Dip

Ingredients

  • 1 cup marinated artichoke hearts drained
  • 1/2 cup parmigiano reggiano cheese grated
  • 4 oz cream cheese
  • 1/4 cup mayonnaise
  • salt to taste
  • black pepper to taste + more for garnish
  • splash of water
  • 2 tbsp jalapenos finely diced + slices for garnish

Instructions

  • Place artichokes into the bowl of a food processor. Pulse until coarsely chopped.
  • Add in parmesan cheese, cream cheese, mayonnaise, salt, and black pepper. Pulse in short bursts or until everything starts to blend.
  • You may need to add in a splash of water to get things going at first. Make sure to leave the dip slightly chunky, so it has a good texture.
  • Spoon dip into a bowl and stir in diced jalapenos by hand. Garnish with more black pepper and a couple sliced jalapenos, if desired.
  • Serve with pita, crackers, tortilla chips, veggies, etc.

    *raising hand* I too get sucked into shows that are soo bad they are good. Case in point-Pretty Little Liars. Luckily for me my husband works nights so I can watch multiple episodes without any complaint from the male department.

    If you haven’t already, you must watch Weeds and Friday Night Lights (the series, not the movie). Both my husband and I were obsessed with those shows until the end.

    Girl, you are hilarious! I had to laugh when you mentioned crack as a possible ingredient…lol! I don’t eat cheese…do you think it would be good without the cheese in the recipe? I think I’d have to add a little fresh minced garlic to the mix since that is my “crack” of choice.

    I have been making this dip for years, after having spent far too many dollars on it at Costco. However, I use sour cream rather than cream cheese, which I am far more likely to have on hand. And in a pinch you can use canned, diced jalepeno. 🙂 Sometimes, I bake it in a gratin topped with more parmesan. I can eat this with a spoon (and believe me I sometimes do!), but it is also excellent if you throw a dollop on top of a rib steak during the last few minutes of grilling. Perfection!

    I’m ashamed to admit that we have the whole series of Dawson’s Creek on DVD.

    Just recently found your blog…and immediately made the tex mex chicken & white cheddar spaghetti, which was absolutely delicious. This dip looks tasty too! I probably should wait until I have a party to take it too, though. I would likely eat the whole bowl…while watching yet another episode of Dawson’s Creek.

    I am currently on season 5 of Dawson’s Creek. I may or may not watch an episode or two every night before bed. I’m either becoming immune to bad TV, or the show really steps it up between season 3 and 4. I am totally obsessed with the wardrobe. I swear I had 80 percent of Joey Potter’s clothes. Love guilty pleasures. I have similar feelings for Dance Academy. Look it up on Neflix. It’s gold.

    I love Netflix!! I haven’t seen Dawson’s creek so maybe I need to put it on the list. I love finding old series and watching them in their entirety. I did it with Friday Night Lights and Mad Men.
