Lunch with Eddie!

This boy loves spending time with his mama in the kitchen. Actually, all of my kids do! There are plenty of times I want to be left alone to chop and stir in solitude, but there are always a handful of times per week where one, two or all three of my children like to join me in my itty bitty New York City kitchen. Sometimes it’s for cutting fruit or vegetables (my favorite kid knives that we use are found here), sometimes it’s kneading dough, and sometimes it’s unloading the dishwasher. Regardless, this is one of the ways I can get a meal on the table while still spending time with each child.

One day last week, Eddie helped me make his lunch, KRAFT Macaroni & Cheese Cauliflower. I always have a few boxes of KRAFT Macaroni & Cheese on hand because it’s such an easy meal option to reach for and I know my kids will eat it, no questions asked. I used to buy the original, but now I’ve started buying new KRAFT Macaroni & Cheese with cauliflower! They have added ¼ cup serving of cauliflower to the pasta, but it looks and tastes exactly the same! If you’ve been following me for more than 5 minutes, you’ll know the joy I feel sneaking veggies into my kids’ meals without them knowing, so this is right up my alley. Eddie never used to like macaroni and cheese when he first started expanding his palate with finger foods after he turned 1, even though these noodles were the perfect sized bites for his mouth. I have my suspicions that his strong dislike had something to do with my intense mac and cheese cravings I had when I was pregnant with him, but I digress. Somewhere after his 18 month mark, he saw his older siblings eating it and wanted it too. Peer pressure at its finest. We typically eat this once or twice a week with a fruit or vegetable on the side. Below, you’ll see I served grapes and cucumber on the side, Eddie’s favorite.

Anyways, below you’ll see a few photos I snapped of us in the kitchen. I sure love this apron wearing little boy!

    Check the freezer section of your supermarket also there are many pastas etc now made with veggies, ie: pasta made with zucchini, cauliflower and they are great located with/near the frozen veggies and such. The kids love it and so do adults. Also check out the “veggie” made tater tots,, riced veggies (when mixed in a bowl with an egg and breadcrumbs and seasoning of your choice you make veggie “meatballs” either fried in a skillet or on a sheet pan in the oven(the kids love making their own different sizes , shapes like a fish stick. Have fun and enjoy it all with the kids, great anytime of the year wonderful at holidays. But watch out adults love them more lol.
