Nothing says Easter like an edible nest!

This is apparently a thing. Not a thing I grew up with, but nonetheless a thing.

I’ve seen nests made out of coconut, rice krispies, brownies, no bake cookies, phyllo dough, chow mein noodles, pasta, and more!! But, by far my favorite edible nests are these ones! Lots of crushed potato chips mixed together with marshmallows and butter and then formed into nests and filled with candy! It is weirdly wonderful and will blow people’s minds. I dropped a few of these off at some neighbors’ houses and they were like “oh, that’s so swee…..ARE THOSE CHIPS?”

Yes, yes they are.

I’m telling you: weird and wonderful.

Oh, and easy too.

Here’s how to make them:

Start out with a bag of Fred Meyer Classic Potato Chips. Be sure to grab the wavy kind! It looks better 🙂 And of course some mini marshmallows a la Kroger.

Into a large pot, melt some butter over low to medium low heat.

Add in some marshmallows and melt those completely.

Crush the entire bag of chips and pour those pieces into the melted marshmallows.

And of course for good measure, add in an extra cup of mini marshmallows.

Stir everything together to create a sticky, well coated chip situation.

Drop this mixture by the large spoonful onto some wax paper. This recipe will make 6 medium or 8 small nests.

Let it cool 5 minutes before manhandling these and forming them into nests. Rubbing a little butter or spraying your fingers with cooking spray will make this go quickly and easily!

Once the nests have come to room temperature, fill them up with lots of Easter goodies!!

I used this heavy bottomed dutch oven to make these because it heats evenly and won’t scorch the marshmallows. I use it 90% of the time for soups, stews and anything I need to transfer from the stove to the oven. And just as a side note, you can get special cleaner from Le Creuset to keep your french oven sparkling clean, but Bar Keeper’s Friend works just as well and is more readily available.

If you’re working with marshmallow, be sure to use an all rubber spatula scraper for easy clean up. This is a good one. I have some that have wooden handles and they are so hard to clean, plus you can’t put them in the dishwasher. It’s the worst. Just find ones that are all rubber, rinse with really hot water and throw into the dishwasher. I’m all about NOT doing dishes.

The Private Selection Gourmet Jelly Beans are so good in these nests. The buttered popcorn flavor is my favorite!!

Parchment paper can work in a pinch if you don’t have wax paper. If you have a Silpat, that could work too but….you have to wash it when you’re done. So I always go for the wax paper 😉

I like to store my filled nests in the gallon size Ziploc bags because it helps keep the candy in the nest. Tupperware could work well too.

Marshmallow Potato Chip Easter Nests

servings 8 small nests
Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 1/4 cup salted butter
  • 6 cups mini marshmallows divided
  • 11.5 oz Classic Wavy Potato Chips 1 bag, such as Fred Meyer Brand
  • Assorted Easter candy the Private Selection Gourmet Jelly Beans are my favorite!

Instructions

  • In a large pot, melt butter over medium low heat. Stir in 5 cups of marshmallows and melt completely. Remove from heat and stir in crushed chips and remaining 1 cup of marshmallows. All the chips should be well coated and sticky.
  • Divide mixture onto wax paper into 6-8 mounds. Using well buttered fingers form into nests and cool completely.
  • Fill nests with any desired candies and store in an airtight container for up to three days.
