This No Bake Brownie Batter Cheesecake recipe is a sweet treat full of brownie batter goodness (just like my Brownie Batter Ice Cream). Plus it takes less than 30 minutes to make!

No Bake Brownie Batter Cheesecakes | Heaven on Earth!
I have two blogging friends (Shelly and Kristan) who make ridiculously amazing treats! Shelly and Kristan are doing a little something called Brownie Batter Week. That’s right people. Brownie Batter WEEK.
A week full of sweet treats that happened to be jam-packed full of brownie batter. {Be still my ever slowing heart.} I just about fell off my chair when I saw this, these, these, and especially these. YEAH. These ladies don’t mess around. So, this No-Bake Brownie Batter Cheesecake is me trying to be as cool as them.
I basically took all the flavors I love about brownies and no bake cheesecake, then combined them into this super easy dessert!

Main Ingredients Needed
I broke down this recipe into two sections, the crust and the filling. Here’s everything you’ll need to make No Bake Brownie Batter Cheesecakes:
For the Crust
- Graham Crackers – these are crushed to create the crust.
- Cocoa Powder – this flavors the crust to be chocolatey.
- Sugar – this sweetens the crust.
- Butter – this is melted to hold the crust together.
For the Filling
- Heavy Whipping Cream – this is whipped up to create whipped cream!
- Powdered Sugar + Vanilla – this is used to sweeten and flavor the whipped cream.
- Cream Cheese – tangy creaminess that is perfect for a no bake cheesecake recipe.
- Brownie Mix – this is the powder that we are going to use from a boxed brownie mix. If you are nervous about bacteria found in the flour, toast the powder on a cookie sheet for a couple of minutes (this should kill any bacteria present).
- Milk – this helps the brownie mix combine smoothly with the rest of the ingredients.
- Mini Chocolate Chips – used as a garnish!
How to Make No Bake Brownie Batter Cheesecakes

1. Crust
In a small bowl, mix all ingredients for crusts together until moist. Divide evenly between 4 serving dishes and press into the bottoms and up the sides about half an inch. Set aside.
2. Make the Filling
In a large bowl, whip cream with powdered sugar and vanilla until stiff peaks form. Spoon out of the mixing bowl and set aside.
Place cream cheese, brownie mix, and milk into the same mixing bowl and whip until smooth. Gently fold in half the whipped cream.
Spoon or pipe over top the crusts.
3. Garnish
Top with remaining whipped cream and garnish with mini chocolate chips if desired. Refrigerate until ready to serve.

Storing Instructions
These can be stored in the fridge for up to 3 days. I would recommend storing without the whipped cream on top and instead garnish as needed. This makes a great make ahead dessert that can be enjoyed any time of the year!

No Bake Brownie Batter Cheesecake
Ingredients
for the crusts-
- 1 cup graham cracker crumbs
- 3 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
- 1/4 cup butter melted
for the filling-
- 1 cup heavy whipping cream divided
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 8 oz Philadelphia Cream Cheese softened
- 1 1/2 cups box brownie mix the powder
- 2 tablespoons milk
- mini chocolate chips for garnish, optional
Instructions
- In a small bowl, mix all ingredients for crusts together until moist. Divide evenly between 4 serving dishes and press into the bottoms and up the sides about half an inch. Set aside.

I can’t believe this only makes four. It looks like there is scads of whipping cream. Just checking. Need to feed a small crowd.
Can you use cool whip instead of the whipping cream?
You could, but I prefer the cream better.
if you wanted to make these as bars instead of individual cakes any recommendations on how to do that?
Just press the crumbs into a greased 8×8 pan and top with the no-bake filling. Chill it well and then cut into bars.

Wow, these shooters cost like $3 at restaurants… for $3 that’s like half the mix!!
