Salted Caramel Brownie Cookies | Best Combo Ever!
Yup, I went there, Salted Caramel Brownie Cookies. Chocolate. Caramel. Sea Salt. Together. In a chewy, warm, sweet brownie mix cookie package. You’re welcome. These are made with the same ingredients that go into a box brownie mix but reduced significantly so that they spread and bake up like cookies! And instead of just being happy with some plain brownie cookies, I stuffed them with caramel and sea salt… Best.Idea.Ever. Ooey gooey, salty, sweet, and fudgy goodness.

Main Ingredients Needed
Well, lucky for you I have these Salted Caramel Brownie Cookies down to a science. And you’re only 6 ingredients away from it! Here’s what you’ll need:
- Brownie Mix – I used Betty Crocker’s Dark Chocolate Fudge Brownie Mix. This has all of the dry ingredients you’ll need for the recipe. You may have to adjust the increments if you’re using a different brand of brownie mix.
- Egg – to add structure to the cookies.
- Vegetable Oil – instead of using butter we are going to stick to vegetable oil for moisture.
- Water – a little extra assurance that these cookies stay moist when baking.
- Caramels – you can find these candies in the snack/sweets aisle at your local grocery store.
- Sea Salt – bigger flakes ensure that you aren’t oversalting your salted caramel.
How to Make Brownie Cookies
Prep
Start by preheating your oven. Line a baking sheet with parchment or silicone baking mat and set it aside.
Make Dough
In a large bowl, stir the brownie mix, egg, oil, and water together until dough forms.
Assemble
Using a cookie scoop, scoop 18 cookies onto your prepared pan. Press down with your fingers. Place 1 unwrapped caramel on each cookie dough bottom and sprinkle with sea salt.
Top with another scoop of cookie dough and press down and seal the caramel in so it is completely encased in dough.
Repeat until all brownie cookies are ready to bake!
Bake!
Bake then remove from oven. Keep cookies on the baking sheet to cool before removing to wax paper. DO NOT place on a cooling rack. There’s a possibility that the bottom cookie could tear, letting your warm caramel ooze out. Serve warm with milk.

Storing Instructions
Leftover brownie cookies will stay good for about a week left on the counter in a sealed plastic bag. If you want them warmed up, try popping them in the microwave for a couple of seconds. That ooey-gooey caramel is so worth it!

Ingredients
- 19.9 oz brownie mix (1 box) I used Betty Crocker’s Fudgy Brownie mix
- 1 egg
- 1/3 cup vegetable oil + 1 tablespoon
- 2 tablespoons water
- 18 caramels
- 1 teaspoon sea salt
Instructions
- Preheat oven to 350. Line a baking sheet with parchment or silicone baking mat and set aside.
- In a large bowl, stir the brownie mix, egg, oil, and water together until dough forms.
- Using a cookie scoop, scoop 18 cookies onto your prepared pan. Press down with your fingers.

- Bake 10 minutes and remove from oven. Keep cookies on baking sheet another 5 minutes before removing to wax paper. DO NOT place on cooling rack. There's a possibility that the bottom cookie could tear, letting your warm caramel ooze out. Serve warm with milk.
