Strawberry Cake Recipe

You guys are just going to DIE when you try this Strawberry Cake. Ever since I went to this restaurant and had a version of a similar cake, I’ve been dreaming of making my own…but bigger and better! It’s been a few months since I’ve been there and I honestly forgot about the cake until I saw some amazing strawberries that I couldn’t pass up. Strawberries are in season and I can tell by how big, juicy and naturally sweet they are….perfect for a cake!

Main Ingredients

This is a homemade and easy strawberry cake recipe made with simple ingredients. Here’s everything you’ll need:

  • Vanilla Cake – feel free to use my vanilla cake recipe or one of your favorites. I also have a vegan cake recipe!
  • Strawberries – the fresher the better. And if you wanted to, you could sub out strawberries for any sort of berry that is in season and still have a delicious cake!
  • Heavy Whipping Cream, Vanilla, and Powdered Sugar – to make homemade whipped cream! Here is my ultimate whipped cream guide.

How to Make Strawberry Cake

This strawberry cake is fairly simple to make! Bake the cake then cool, whip up the strawberries and cream frosting then layer and frost. Refrigerate then voila! For the full recipe check out the recipe card down below.

  1. I started by making this Vanilla Dream Cake recipe from my friend Jessica from The Novice Chef blog. Very simple ingredients needed for this cake that I had on hand and was it was in the oven pretty quick. Feel free to use my vanilla cake recipe that will make 2 rounds.
  2. Once the cakes were baked thoroughly, I popped them out of the pans to cool completely. Hot cake + whipped cream = melty mess. FYI. SO!! Just wait it out.
  3. Once they’re cool, slice them both down the middle to create 4 layers.

Strawberry Cake Filling

  1. Ok, now comes the fun part! Whip a whole vat of heavy whipping cream with a little vanilla and some powdered sugar.
  2. Put half of that cream aside, and mix the other half with these diced fresh strawberries. Like so.
  3. Layer your cake up using the strawberries and cream as the filling for this cake.

  1. Frost the whole thing using the plain whipped cream. Doesn’t this look super dreamy?! Mmm….. Then take a few extra berries and decorate the top of the strawberry cake.

  1. Pop this into the fridge for a few hours for everything to solidify and ‘come together’. Then slice it up and enjoy!

Nothing hard about this cake at all. And you can see that I purposely didn’t smooth the sides. I love the look of an unperfected cake. strawberry cake


Any leftover strawberry cake can be kept in the fridge, covered for up to 5 days! I would finish it sooner rather than later though. Perfect to enjoy cold on a hot summer day 🙂

Homemade Strawberry Cake Recipe

This homemade Strawberry Cake recipe is the perfect creamy dessert for summer! Light, refreshing, and sweet enough to satisfy any craving!

  • 1 recipe of this Vanilla Dream Cake recipe or any other vanilla cake recipe
  • 2 1/2 cups heavy cream
  • 1 tablespoon vanilla
  • 1/2 cup powdered sugar
  • 1 cup fresh diced strawberries + more for garnish


  • Make vanilla dream cake according to recipe. Cool completely. Slice cakes in half lengthwise to create 4 layers.
  • Whip heavy cream with vanilla and powdered sugar until stiff peaks form. Remove half of the cream and set aside. Stir diced strawberries into the remaining cream.
  • Place one layer of cake onto a serving platter. Spread 1/3 of the strawberries and cream filling overtop. Add another layer of cake and continue layering until all 4 layers are in tact. If filling looks like it's being pushed out from the sides of the cake, simply scrape the edges to even everything out. Frost the entire cake with remaining plain whipped cream. Top with sliced strawberries as a garnish.
  • Refrigerate 4 hours to overnight to set completely {so it will cut nicely}. Slice and serve.

    I made this for my birthday – it came out really nice! The cake was easy to make but I would suggest using 6inch pans for thicker cakes – I had only 9in pans available and the cakes were too thin to cut in half. The cake had a great vanilla taste and was very moist – however it wasn’t as light and fluffy as I wanted it to be – but that could be from not cooking it longer or over mixing – not sure yet! As for the whipping cream, it was super easy to make too and had a very nice soft sweetness to it! I would probably put 1cup of powder sugar in it next time though instead of 1/2 since my strawberries were slightly tangy! This is my second cake that I’ve tried so far and I’m very pleased! Looking forward to making it again!

    Just popping in to say thank you for this recipe!

    I used fresh picked strawberries from the berry farm down the road and thought this cake was perfect! I cut the recipe in half and only used a single 8 inch pan and it turned out wonderfully.

    Tastes like summer!

    I made this for my mom who loves anything reminiscent of strawberry short cake. This Strawberry Cake recipe is FLAWLESS. One of the best cakes I’ve ever tasted.

    I used Lauren’s vanilla cake recipe (not her friend’s) and it was deliciously dense and vanilla-y. The whipped cream filling/topping are superior to traditional frostings–not so sweet, even more flavorful. I love the diced up strawberries in the whipped cream to apply between layers. It was fun to decorate the top with fresh cut strawberries.

    I’m so glad I took a gamble on this. It was an ideal summer cake and a big hit.
