I thought this recipe was my Mom’s because she made it practically every summer once we went strawberry picking. But, just a few days ago I called to get all the nitty-gritty details, and turns out it’s a recipe from a lady that used to teach me Sunday school at church when I was 4! I swear, those older church ladies have all the good recipes.

Ingredients Needed For Strawberry Jello Pie

This recipe is a basic strawberry pie recipe made with jello! It truly is as simple as it sounds and perfect on a hot summer day. Here’s everything you’ll need:

  • Pie Crust – for this recipe I used a pre-made frozen pie crust bought from the grocery store. But feel free to use either of my pie crust recipes: All Butter Pie Crust or Easy Pie Crust Recipe.
  • Fresh Strawberries – enter the star of the show: les strawberries. These were ripe little suckers that I washed and hulled. The sweeter the better. 🙂 A good rule for strawberries….and life in general.
  • Water, Cornstarch, Granulated Sugar + Strawberry Jell-O Mix – these are to make the jello to our pie! Cornstarch for structure, sugar for sweetness, and jello mix for flavor! (Water helps everything combine).
  • Heavy Whipping Cream, Powdered Sugar + Vanilla Extract- and these are all used to make Homemade Whipped Cream! Alternatively, you can use cool whip but trust me when I say homemade is best.

Variations

  • Graham cracker crust: Swap the pie shell for a homemade or premade graham cracker crust.
  • Cool Whip: Use Cool Whip instead of homemade whipped cream.
  • Mandarin oranges: Add alongside the strawberries for a citrus twist or add other fresh fruit you love with strawberries!
  • Chocolate drizzle: Drizzle a little bit of melted chocolate over the top of this no bake strawberry pie!

How to Make Strawberry Pie with Jell-O

1. Prep Strawberries + Pie Shell

Wash and hull strawberries. Place them upside down in a blind baked pie shell and set aside. Here is a great all-purpose homemade pie crust which works well for this recipe.

2. Make Gelatin Mixture

In a liquid measuring cup or small bowl, pour in ice-cold water, cornstarch and sugar. Stir until mostly dissolved. Microwave 1-2 minutes until mixture bubbles up and thickens. (It should turn translucent.)

3. Pour Over Strawberries + Chill

Stir in strawberry jello powder and pour the gelatin mixture over strawberries in the prepared pie shell. Spread over top and refrigerate until set, 2-3 hours.

4. Make Whipped Cream + Assemble

In a large bowl, whip cream, sugar, and vanilla extract together until stiff peaks form. Spread over top of pie and garnish with more fresh strawberries. Serve cold.

Storage + Make Ahead Directions for Strawberry Jello Pie

Any leftover Strawberry Jello Pie you have can be kept in the fridge, covered with plastic wrap for up to 4 days! Because the jello is semi-solid, it helps keep the pie crust firm while the encased strawberries stay juicy! This means it also makes a great make-ahead dessert.

If you are wanting to make this a few days in advance, be sure to wait and whip your cream right before serving.

What is Blind Baking?

Blind baking is simply pre-baking your pie crust before filling it. If you are making a cream-based pie, you’ll need a pre-baked pie crust because the filling will be made separately.

Blind Baking Instructions

Once you have your pie crusts made, roll out and fill your pie plate. Prick dough with a fork, add a square of parchment paper to the crust and fill with pie weights. If you don’t have pie weights, dried rice, beans or even flour can work! You just want to hold the crust in place to prevent shrinking and bubbles.

  • 1 9 inch blind baked pie shell
  • 1 ½ cups strawberries fresh + more for garnish, if desired
  • 1 cup water
  • 2 tablespoons cornstarch
  • ¾ cup granulated sugar
  • 3 oz strawberry JELL-O gelatin dessert mix
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  • Wash and hull strawberries. Place them upside down in baked (and cooled) pie shell and set aside.
  • In a liquid measuring cup or small bowl, pour in water, cornstarch and sugar. Stir until mostly dissolved. Microwave 1-2 minutes until mixture bubbles up and thickens. (It should turn translucent.)
  • Stir strawberry jello powder into sugar water mixture and pour over strawberries. Cover and refrigerate until set, 2-3 hours.
  • In a large bowl, using a hand mixer or stand mixer, whip heavy cream, sugar and vanilla extract together until stiff peaks form.
  • Spread whipped cream over top the pie and garnish with more fresh strawberries. Serve cold.

Notes

Recipe tips: In my opinion, everything is better with whipped cream but growing up we ate this strawberry pie without it. It’s delicious either way.

    My family makes a pie nearly identical to this, except using fresh summer peaches and peach Jell-o! I was just looking through my grandmother’s old cookbooks yesterday and found her handwritten recipe for this cold peach pie. I love the idea of using strawberries also.
