Sweet Potato Sliders

Hey guys! Did you have a good weekend? I think I did….I’m trying to remember what exactly I did and nothing is coming to mind. I know I took a nap or two…or four. And I probably did a little eating.
Oh wait. I went to see a movie with friends and then got frozen yogurt. Those fro-yo places are popping up on every corner and I kind of secretly love it. My theory is everyone deep down wants 5 kinds of frozen yogurt topped with brownie pieces and cookie dough.
And oreos.
And nerds.
And chocolate covered pretzels.
And nutterbutters.
At least I did Saturday night. Cause I’m basically an 8 year old.
I figure I only live once. I’d also like to point out that I have no self control.
But that is neither here nor there. You all already knew that.
ANYWAYS, I bring up self control for a reason. And that reason is because I have none when it comes to most foods except maybe salad. And steamed vegetables.
See these purdy little sliders I made? YEAH. They were amazeballs. Self control? NO SIR! I had none when I made these and happily shoved 11 of these little guys into my obnoxiously large mouth.
Now, if you think you’re not a mild pepperoncini ring person, I would beg to differ, especially in these little sandwiches. They make such a nice balance between the sweet pork and the slaw. It’s a delicious zing with a teeny tiny kick. Plus, my sister got me hooked on them last summer and I’ve never been the same. {Try them in egg or tuna salad sandwiches….so yummy!}
If you have a really great pulled pork recipe that you swear by, use that one. I used my easy bbq pulled pork recipe {meant for the crockpot!} with our all time favorite coleslaw recipe. It’s my husband’s and my father-in-law’s favorite recipe for coleslaw for ever and ever til the end of time. Or that’s what I tell myself.
Anyways, because I love ya, and because I know you all just can never get enough of me {HAHA!} I made a video on how to make these sliders. So without further ado, here I go:

Sweet Potato Sliders
Ingredients
- 1/2 recipe Easy BBQ Pulled Pork
- 1/2 recipe The Best Coleslaw Ever
- 1 package crinkle cut sweet potato fries such as Alexia
- 1/3 cup drained mild yellow pepper rings
Instructions
- Bake sweet potato fries as directed on package. Cool slightly 5 minutes.
- To assemble sliders, place 1-2 heaping tablespoons of pulled pork on one sweet potato fry. Top with slaw and a few yellow pepper rings. Top with another sweet potato fry approximately the same size. Repeat until no more fries remain. Serve warm.
