Healthy Turkey Chili

Ingredients

  • 2 tablespoons olive oil
  • 1/2 large onion diced
  • 1 pound ground turkey breast
  • 2 cloves garlic minced
  • 1/2 green bell pepper diced
  • 2 large carrots peeled and diced
  • 2 stalks celery rinsed and diced
  • 1 15.25- oz can corn drained
  • 2 14.5- oz can diced tomatoes
  • 2 16- oz cans beans any beans you have will work! I used black beans and pinto beans
  • 1 can water
  • salt
  • pepper
  • 1 tablespoon cumin
  • 3/4 tablespoon chili powder
  • 1/2 teaspoon cinnamon
  • 1 large bay leaf 

Optional toppings:

  • chopped cilantro
  • grated cheddar cheese
  • lettuce
  • chopped tomatoes
  • lettuce
  • sour cream
  • avocado
  • lime wedges/lime juice
  • tortilla chips

Instructions

  1. In large pot or dutch oven, heat oil over medium heat. Add in onions, carrots and celery. Cook until vegetables have softened slightly. Stir in green bell peppers, garlic, salt and pepper. Add ground turkey. Using wooden spoon or stirring utensil, break meat up to increase cooking time and to make smaller pieces. Once turkey is completely cooked, add in all canned ingredients and spices. Simmer on medium low heat for at least 20 minutes (the longer you let this simmer, the better it tastes). Serve with desired toppings.
