Southwest Sausage and Quinoa Lettuce Wraps

  • 2 tablespoons olive oil
  • 1/2 large onion diced
  • 1 small sweet potato peeled and cubed {1/4 inch pieces}
  • 2 hot Italian sausages
  • 1 small zucchini
  • 1 ear sweet corn kernels removed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • garlic salt & pepper to taste
  • 2 cups leftover cooked quinoa
  • 6 butter lettuce leaves washed and dried
  • cilantro and red onion for garnish


  1. Place large skillet over medium heat. Sauté onion and sweet potato in olive oil. Remove sausage from casings and place into pan, breaking it up as it cooks. Once sausage is thoroughly cooked, stir in zucchini, corn and spices. Cook another 3-4 minutes. Add in the quinoa to warm it through. Spoon into lettuce leaves, top with cilantro and red onion if desired and serve.
