Oat Stuffed Breakfast Peaches

It's like eating peach crisp for breakfast, except healthier!

  • 3 large fresh ripe peaches
  • 1/2 cup oats
  • 1/4 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons coconut oil
  • 3 tablespoons maple syrup
  • greek yogurt + more cinnamon for garnish {optional}


  1. Preheat oven to 350 degrees.
  2. Peel peaches, slice in half and remove pits. Scoop out a little more peach in the center to allow more filling. Place into a baking dish and set aside.
  3. In a small bowl, stir dry ingredients together. Mash in coconut oil and maple syrup until mixture comes together. Spoon evenly into the peaches. Bake 20-30 minutes, then serve warm with yogurt and more cinnamon.
