Falafel Salad Bowls
Delicious falafel salad bowls are full of veggies and are really fast to make. Made easy by using store-bought falafel!

- 5 oz container baby kale/spinach mix
- 1/2 lb baby tomatoes
- 1 english cucumber
- 1/4 red onion sliced thinly
- small handful parsley
- premade falafel heated thoroughly
dressing:
- 1/2 cup real mayonnaise
- juice of 1/2 lemon
- 1 large garlic clove finely minced
- salt & pepper to taste
- 1/4 teaspoon dried oregano
- splash water
Place all ingredients for salad into a large bowl.
For dressing: whisk all ingredients together until smooth.
Drizzle and toss dressing with salad and serve immediately.
