Loaded Pepita Granola

  1. Preheat oven to 250 degrees. Line 2 rimmed baking sheets with parchment paper and set aside.
  2. Place all dry ingredients into a large bowl and stir.
  3. Melt butter, maple syrup and brown sugar together in a small bowl in the microwave, about 1 minute. Stir in vanilla, and spices. Pour entire contents over dry ingredients in bowl. Stir to coat evenly and spread evenly between 2 baking sheets. Bake 1 hour or until very golden brown. Remove from oven, cool completely, then store in air tight containers for up to 2 weeks...that is if it lasts that long.
