Pumpkin Seed Granola
You'll want to add this delicious Pumpkin Seed Granola to your repertoire. It is loaded with the wholesome goodness of oats, nuts, and coconut.
Servings 11 cups
- 6 cups rolled oats
- 1 cup raw pepitas
- 1 cup unsalted sunflower seeds
- 1 1/2 cups raw almonds whole
- 1 cup unsweetened coconut flakes
- 3 tablespoons sesame seeds
Preheat oven to 250 degrees. Line 2 rimmed baking sheets with parchment paper and set aside.
Place all dry ingredients into a large bowl and stir.
Melt butter, maple syrup and brown sugar together in a small bowl in the microwave, about 1 minute. Stir in vanilla, and spices. Pour entire contents over dry ingredients in bowl. Stir to coat evenly and spread evenly between 2 baking sheets.
Bake 1 hour or until very golden brown. Remove from oven, cool completely, then store in air tight containers for up to 2 weeks...that is if it lasts that long.
