Homemade Turkey Gravy Recipe

Ingredients

  • 1/2 cup drippings from the roast turkey
  • 2 tablespoons flour or cornstarch
  • 1 1/2 cups chicken stock or turkey stock if you can find it
  • 1 tablespoon lemon juice optional!
  • 1/2 green onion chopped
  • salt & pepper to taste

Instructions

  1. Pour off all the turkey drippings into a large bowl or liquid measure. Skim off the fat. Return 1/4-1/2 cup drippings to the roasting pan. Place over medium to medium high heat.

  2. Sprinkle over flour and whisk into the drippings to create a paste. Cook 1 minute. Whisk in remaining drippings or enough stock to equal 1 1/2 cups. Bring to boil and then reduce to simmer, whisking to avoid lumps. After gravy boils, it should thicken up nicely.

  3. Taste and add salt or pepper if desired. Right before serving stir in green onion and lemon juice (optional, but delicious!) Serve gravy warm.

Recipe Notes

*If you get more than 1/2 cup of turkey drippings from your bird, use up to 2 cups of it for this gravy! You want a ratio of 1 tablespoon flour to 1 cup of drippings (or stock). Just be sure to skim off the fat before using.

*If you would like a thicker gravy, add an extra tablespoon or two of flour

*if you would like a thinner gravy, whisk in more chicken or turkey stock
