Carolina BBQ Pulled Pork Frito Bites
Carolina BBQ Pulled Pork Frito Bites are crunchy, tangy, sweet-with-a-little-heat, pork-tastic Frito bites! Carolina sauce never paired so well with pulled pork. It's a perfect tailgating recipe!
Servings 36 bites
for the pork-
- 1 3- lb pork shoulder roast
- 1/2 onion chopped roughly
- 2 cups beef broth
- 2 cloves garlic smashed
- salt & pepper to taste
for the carolina bbq sauce-
Place all ingredients for the pork into a crockpot. Place the lid on and cook on high for 4 hours or until pork shreds easily with fork. Remove pork from crockpot and shred, discarding fat as you go.
To make the carolina bbq sauce, place all ingredients into a saucepan and heat over medium, stirring as you go. Cook for 10 minutes and remove from heat. Pour half into the shredded pork and toss to coat.
To assemble the Frito bites, place about 1 tablespoon of pork into each Frito scoop. Drizzle with more bbq sauce and top with cilantro. Serve immediately.
