Preheat oven to 350 degrees. Spray 12 mini loaf pans with non stick cooking spray and set aside.
In a large bowl, stir all ingredients together until smooth and well mixed. Divide evenly between loaf pans and bake 12-15 minutes OR until toothpick comes out clean or with a few moist crumbs attached.
Remove from oven and cool 10 minutes before removing from pan. Serve warm or cool to room temperature and store in an airtight container for up to 3 days.
