Beef Enchilada Dip
Beef Enchilada Dip is the perfect appetizer for any occasion. You only need 3 ingredients and 10 minutes! A hot and bubbly Mexican appetizer everyone will love.
Servings 6 servings
- 3 cups leftover pot roast not in gravy
- 1 can mild red enchilada sauce 1 1/2 cups or so
- 2 cups cheddar cheese grated
- cilantro optional
- tortilla chips for serving
Shred pot roast and place into a large bowl. Stir enchilada sauce into the meat with half the cheese. Microwave 3-4 minutes or until hot and cheese has melted.
Stir in a little chopped cilantro if you'd like.
Pour into oven safe dish, top with remaining cheese and broil 1-2 minutes or until hot and bubbly. Serve immediately with chips.
