When you're in a pinch and need a fast dessert, Funfetti Ice Cream Cake is for you! I took a lot of help from the store to make this yummy kid-friendly treat!

Ingredients

  • 16.5 oz refrigerated sugar cookie dough
  • 6 cups vanilla ice cream
  • 15.6 oz prepared confetti funfetti vanilla frosting

Instructions

  • Preheat oven to 350 degrees. Line small jelly roll pan {1 x 13 x 9.5} with parchment paper and spread cookie dough in an even layer across the bottom. Bake 10-12 minutes or until edges are golden brown. Cool to room temperature, about 20 minutes.
  • Bring vanilla ice cream out of freezer and sit on counter for 10 minutes or easy scooping. Scoop vanilla ice cream and entire tub of vanilla frosting into the bowl of a stand mixer and stir to combine. Spoon onto baked cookie bottom and stir in half the sprinkles that came with the frosting. Top with remaining half. Freeze until solid, about an hour. Cut into squares and serve.
