Falafel Salad Bowls

Delicious falafel salad bowls are full of veggies and are really fast to make. Made easy by using store-bought falafel!

Ingredients

  • 5 oz container baby kale/spinach mix
  • 1/2 lb baby tomatoes
  • 1 english cucumber
  • 1/4 red onion sliced thinly
  • small handful parsley
  • premade falafel heated thoroughly

dressing:

  • 1/2 cup real mayonnaise
  • juice of 1/2 lemon
  • 1 large garlic clove finely minced
  • salt & pepper to taste
  • 1/4 teaspoon dried oregano
  • splash water

Instructions

  • Place all ingredients for salad into a large bowl.
  • For dressing: whisk all ingredients together until smooth.
  • Drizzle and toss dressing with salad and serve immediately.
