Unwrap and chop chocolate into small pieces. Place into heat-proof bowl and place over double boiler to melt slowly and gently. Remove from heat and cool 10 minutes.
Spread chocolate into 1/2 inch thick rectangle onto parchment paper lined baking sheets. {I made mini chocolate bark bars because my family is picky, but feel free to make one big one.}
Top melted chocolate with any desired toppings. Rest at room temperature until set. Cut into pieces and serve.
