Bake sweet potato fries as directed on package. Cool slightly 5 minutes.
To assemble sliders, place 1-2 heaping tablespoons of pulled pork on one sweet potato fry. Top with slaw and a few yellow pepper rings. Top with another sweet potato fry approximately the same size. Repeat until no more fries remain. Serve warm.
