Sweet Potato Sliders

Replace the bun with sweet potato fries and you have delicious Sweet Potato Sliders. Perfect for a weeknight or weekend dinner.

Ingredients

  • 1/2 recipe Easy BBQ Pulled Pork
  • 1/2 recipe The Best Coleslaw Ever
  • 1 package crinkle cut sweet potato fries such as Alexia
  • 1/3 cup drained mild yellow pepper rings

Instructions

  • Bake sweet potato fries as directed on package. Cool slightly 5 minutes.
  • To assemble sliders, place 1-2 heaping tablespoons of pulled pork on one sweet potato fry. Top with slaw and a few yellow pepper rings. Top with another sweet potato fry approximately the same size. Repeat until no more fries remain. Serve warm.
