Breaded Bruschetta Chicken

This delicious Chicken Bruschetta recipe is breaded and baked chicken tenders served over buttered angel hair and topped with fresh tomato.

Ingredients

  • 3/4 lb. angel hair pasta
  • 1 1/2 lbs. chicken tenders
  • 1 cup bread crumbs
  • 1 cup grated parmesan cheese
  • 2 teaspoons garlic salt
  • pepper to taste
  • 1/4 cup butter melted

for the bruschetta topping-

  • 5 medium 'on the vine' tomatoes diced
  • 1 small clove garlic grated
  • 20 basil leaves chopped
  • salt & pepper to taste
  • 1 tablespoon each olive oil and balsamic vinegar optional

Instructions

  • Preheat oven to 375 degrees. Spray 9x13 glass dish with non stick cooking spray and set aside.
  • Bring large pot of salted water to boil. Cook angel hair pasta until al dente. Drain, coat with 1-2 tablespoons butter {if desired} and set aside.
  • While pasta is cooking, rinse chicken and blot with paper towels to dry. In shallow dish, stir bread crumbs, cheese, garlic salt and pepper together. Place melted butter into a large bowl. Dip chicken pieces into the butter, then press into the bread crumb mixture. Place into greased pan. Repeat until all chicken is coated. Bake 15-20 minutes in preheated oven or until thoroughly cooked and golden brown.
  • While chicken is cooking, stir tomatoes together with garlic, basil, salt, pepper, olive oil and balsamic vinegar. {I didn't add the oil or vinegar because I ran out of both...oops. Do as I say not as I do.}
  • To assemble, place buttered pasta onto a plate. Top with chicken, then tomato topping. Serve.
