This delicious Chicken Bruschetta recipe is breaded and baked chicken tenders served over buttered angel hair and topped with fresh tomato.

Ingredients
3/4lb.angel hair pasta
1 1/2lbs.chicken tenders
1cupbread crumbs
1cupgrated parmesan cheese
2teaspoonsgarlic salt
pepper to taste
1/4cupbutter melted
for the bruschetta topping-
5medium 'on the vine' tomatoes diced
1small clove garlic grated
20basil leaves chopped
salt & pepper to taste
1tablespooneach olive oil and balsamic vinegar optional
Instructions
Preheat oven to 375 degrees. Spray 9x13 glass dish with non stick cooking spray and set aside.
Bring large pot of salted water to boil. Cook angel hair pasta until al dente. Drain, coat with 1-2 tablespoons butter {if desired} and set aside.
While pasta is cooking, rinse chicken and blot with paper towels to dry. In shallow dish, stir bread crumbs, cheese, garlic salt and pepper together. Place melted butter into a large bowl. Dip chicken pieces into the butter, then press into the bread crumb mixture. Place into greased pan. Repeat until all chicken is coated. Bake 15-20 minutes in preheated oven or until thoroughly cooked and golden brown.
While chicken is cooking, stir tomatoes together with garlic, basil, salt, pepper, olive oil and balsamic vinegar. {I didn't add the oil or vinegar because I ran out of both...oops. Do as I say not as I do.}
To assemble, place buttered pasta onto a plate. Top with chicken, then tomato topping. Serve.
