Place frozen pineapple, cream of coconut and simple syrup into the bottom of a blender. Using the damper, blend until a thick and smooth drink comes together.
Divide between two serving glasses and top with whipped cream, cherries and fresh pineapple.
*7 oz of coconut cream is about half of a can, found on the same shelf as coconut milk.
