- 4 slices bacon
- 1/4 cup dijon mustard
- 1/2 cup honey
- 1/2 teaspoon dried rosemary
- 2 chicken breasts cut into 1-inch pieces
- 1 1/2 tablespoons butter
- salt to taste
- black pepper
- dried chives for garnish, optional
Preheat oven to 375° F.
In a small skillet, cook bacon until crisp. Remove to drain and crumble. Set aside.
In a 9x9 glass baking dish, stir mustard, honey, rosemary, chicken, salt and black pepper together until well mixed.
Dot the top with butter and bake 20-25 minutes or until chicken internal temperature reads 165° F.
Remove from oven, stir, and top with cooked bacon.
Garnish with chives and serve over rice, if desired.
