Line two baking sheets with parchment paper and set aside. Preheat oven to broil.
Using a large flower or rosette tip, pipe mashed potatoes into two-inch rosettes. {I used Wilton tip #1--it's huge.} Spray or lightly dab {with a pastry brush} tops of rosettes with melted butter.
Place under broiler for 2-3 minutes or until edges become crispy and golden. Remove from oven and serve immediately.
