Doctored Up Baked Beans

Sweet and savory, these Doctored Up Baked Beans are easy to make and a fantastic addition to any summer meal, but you didn't have to slave for hours in the kitchen. Flavored with bacon, molasses, onions, garlic and more, you will fall in love with this classic recipe.

Ingredients

  • 1/2 lb hickory smoked bacon
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 1/2 green bell pepper diced
  • 56 oz baked beans 2-28 oz cans, such as Bush's
  • 1/3 cup BBQ Sauce such as Sweet Baby Ray's
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 3 tbsp molasses
  • 2 tsp dried mustard
  • salt & black pepper to taste

Instructions

  • Preheat oven to 350° F. Place large dutch oven pot over medium-low heat. Cut bacon into small pieces and render fat out. You want to cook the bacon right before it gets browned and crispy. Using a slotted spoon, remove bacon to paper towel lined bowl. Set aside.
  • Pour off excess bacon grease, leaving 2 tablespoons in the bottom of the dutch oven. Place back on stovetop and increase the heat to a medium to medium-high. Add in onion, garlic and green bell pepper and stir to sauté in bacon grease. Cook 3 minutes or until it starts to brown.
  • Pour in cans of baked beans into the pot with BBQ sauce, brown sugar, apple cider vinegar, molasses, dried mustard, salt and pepper. Stir well and remove from heat. Add tight fitting lid and bake 45 minutes to 1 hour.
  • Let stand 10-15 minutes before serving.
