This homemade Toffee Recipe is buttery, crisp, and covered with a layer of melted chocolate and toasted pecans. Made with simple ingredients on the stovetop, it's an easy homemade candy that's perfect for Christmas, gifting, or whenever you're craving something sweet and crunchy.
Prep the pan. Line a 9x13-inch baking pan or rimmed baking sheet with parchment paper. Sprinkle about half of the chopped pecans evenly over the prepared pan and set aside.
Make the toffee. Add butter, sugar, and salt to a heavy-bottomed saucepan over medium heat. Cook, stirring steadily, until the butter has melted and the mixture comes together.
Cook to hard-crack stage. Continue cooking and stirring until the mixture turns a deep golden-amber color and reaches 300°F on a candy thermometer. This should take approximately 10–15 minutes.
Add vanilla. Remove from heat and carefully stir in vanilla.
Pour. Immediately pour the hot toffee over the pecans and carefully spread into an even layer.
Add chocolate. Let the toffee sit for 2–3 minutes, then sprinkle chocolate chips evenly over the top. Let stand another 2–3 minutes until softened, then spread the melted chocolate across the toffee.
Finish. Sprinkle with the remaining toasted pecans and gently press them into the chocolate.
Cool. Let cool completely at room temperature, or refrigerate until firm. Break into pieces and serve.

A candy thermometer takes the guesswork out of homemade toffee. The mixture needs to reach 300°F for that crisp, snappy texture.
