Place cubed pieces of chicken into a large bowl and set aside.
To a blender, add garlic, lime zest, lime juice, cilantro, oregano, honey, avocado oil, salt, and black pepper, and blitz until garlic and cilantro have broken down into tiny pieces.
Pour over chicken and stir to coat. Cover and marinate in fridge for 1-2 hours.
While chicken is marinating, soak wooden skewers in warm water for about 30 minutes.
When ready to cook, alternate pieces of marinated chicken and folded lime slices onto wooden skewers. Discard marinade.
Season with more salt and pepper, if desired and grill approximately 4 minutes per side or until grill marks form and chicken is thoroughly cooked to 165° F.
Remove from grill and serve.
