Grilled Cilantro Lime Chicken Skewers

Ingredients

  • 2 lbs chicken breast cut into 1 1/2-2 inch cubes
  • 3 cloves garlic roughly chopped
  • zest of 1 lime
  • juice of 2 limes
  • 1/2 bunch fresh cilantro
  • 1/2 teaspoon dried oregano
  • 2 tablespoons honey
  • 1/4 cup avocado oil
  • salt to taste
  • black pepper to taste
  • 1-2 limes sliced very thinly

Instructions

  • Place cubed pieces of chicken into a large bowl and set aside.
  • To a blender, add garlic, lime zest, lime juice, cilantro, oregano, honey, avocado oil, salt, and black pepper, and blitz until garlic and cilantro have broken down into tiny pieces.
  • Pour over chicken and stir to coat. Cover and marinate in fridge for 1-2 hours.
  • While chicken is marinating, soak wooden skewers in warm water for about 30 minutes.
  • When ready to cook, alternate pieces of marinated chicken and folded lime slices onto wooden skewers. Discard marinade.
  • Season with more salt and pepper, if desired and grill approximately 4 minutes per side or until grill marks form and chicken is thoroughly cooked to 165° F.
  • Remove from grill and serve.
