Ground Beef Taquitos

Baked Ground Beef Taquitos are crispy on the outside with a cheesy, well-seasoned beef filling that hits all the right notes. They make an easy dinner, a popular game day appetizer, or a grab-and-go snack that everyone begs for.

Ingredients

  • 1.5 pounds ground beef
  • 1 medium onion diced
  • 1 jalapeno diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 tablespoon tomato paste
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar
  • 1/2 cup Mexican cheese
  • 8 corn tortillas
  • 1 tablespoon salted butter melted
  • cooking spray for baking

Instructions

  • In a skillet over medium heat, cook the ground beef until browned and cooked through.
  • Add the diced onion and cook until softened and lightly browned. Stir in the tomato paste, chili powder, cumin, garlic powder, salt, and black pepper. Cook for 2–3 minutes, stirring occasionally.
  • Remove the skillet from the heat and stir in the shredded cheddar, Mexican cheese, and diced jalapeño until well combined.
  • Warm the corn tortillas slightly until soft and pliable.
  • Place about 2 tablespoons of the beef mixture along one edge of each tortilla. Roll tightly and place seam-side down.
  • Arrange the taquitos on a parchment-lined baking sheet. Lightly brush each one with melted butter.
  • Bake at 400°F (200°C) for 15–20 minutes, or until the tortillas are golden and crispy.
  • Serve warm with your favorite dips, such as guacamole, sour cream, or salsa.

Notes

Let the beef mixture cool for a few minutes before filling the tortillas. It will be easier to handle and less likely to make the tortillas soggy.
