Ingredients

  • 1 1/2 cups plain whole milk Greek yogurt or 2%, if desired
  • 1/4 teaspoon baking powder (this is what makes it "fluffy" - don't skip it!
  • 2 tablespoons banana pudding mix
  • 1 tablespoon powdered sugar or sweetener or choice, optional
  • 1/4 cup peanut butter or 1/8 cup peanut butter powder
  • 1 large banana sliced
  • 2 sheets graham crackers optional, for garnish (about 8 small crackers)

Instructions

  • Add yogurt, baking powder, powdered sugar (if using), and pudding mix to a bowl and stir until fully combined.
  • Warm the peanut butter in the microwave for 20 to 30 seconds to make it more pourable.
  • Layer two serving bowls with a couple of spoonfuls of the yogurt mixture, a layer of banana slices, a drizzle of peanut butter, and a crushed graham cracker, if desired. Repeat the layers until all of the yogurt mixture has been used.
  • Top with a graham cracker, slice of banana and final drizzle of peanut butter. Serve immediately or chill in the fridge for up to one day.

Notes

Storage Instructions

This is best eaten right after layering, but you can refrigerate it in an airtight container for up to 1 day. If you want to prep ahead, mix the yogurt base and store separately, then add bananas and peanut butter right before serving. This recipe isn’t ideal for freezing since the yogurt will separate once thawed.
