Preheat oven to 350 degrees. Lightly grease 8 jumbo muffin tins with non stick cooking spray.
Pop open can of biscuits. Press each biscuit dough round into the bottom and up the sides (about 1/2 way) of greased pan.
In a large bowl, melt butter and hot sauce together. Stir in chicken to coat. Set aside.
To assemble:
Spread 1/2 tablespoon ranch dressing onto bottom of biscuit bowls. Sprinkle 1/2 tablespoon of blue cheese crumbles onto dressing and top with about 1/4 cup of prepared chicken. Top chicken with another 1/2 tablespoon of ranch dressing, 1/2 tablespoon blue cheese crumbles and 1 tablespoon each of mozzarella and cheddar cheeses.
Bake for 15-20 minutes or until edges have browned and dough is thoroughly cooked. Cool 5 minutes before removing from pans. Top with chopped cilantro and serve warm with more ranch.
