Make Ree's doughnuts according to her recipe without cutting holes in the centers and minus the glaze.
Once those are made or while they are rising, make the cream cheese frosting and store in the fridge until ready to assemble the doughnuts.
Whisk vanilla pudding into the cold milk until smooth. Wait 5 minutes until it thickens and store in fridge until ready to assemble.
Right before assembly, slice bananas.
For assembly: spoon pudding into a pastry bag with a filling tip. Poke a hole into the sides of each doughnut and pipe about 2 tablespoons of pudding into the centers.
Spread a generous amount of cream cheese frosting overtop doughnuts. Top with sliced bananas, crushed Nilla wafers, more cream cheese frosting and more Nilla wafers. Repeat with each doughnut until they are all filled and topped. Serve immediately.
