Ingredients

for the patties--

  • 14 oz tuna two 7 oz cans
  • 1 large egg
  • 4 saltine crackers crushed fine
  • 1/2 small red bell pepper petite diced
  • 1/4 cup onion petite diced
  • 1/2 teaspoon old bay seasoning
  • 1 tablespoon flat leaf parsley fresh, chopped
  • salt to taste
  • black pepper to taste
  • 1 tablespoon butter
  • tartar sauce for service

Instructions

  • Combine all ingredients together in a large bowl just until the mixture starts to come together.

  • Form into approximately 4 inch in diameter flat patties.

  • Preheat large nonstick skillet over medium heat. Melt half of the butter.

  • Fry patties for about 5 minutes on each side, or until crispy and browned. You may need to do this in batches depending on the size of your pan.
