In a small bowl, stir salt, pepper, cumin and oregano together. Rub onto entire roast and set aside.
Heat oil in large heavy bottomed braiser. Sear meat on all sides until brown. Toss in onions, garlic, bay leaves, lemon slices and chicken stock. Stir and cover. Reduce heat to low and cook for 1-2 hours or until meat is thoroughly cooked. OR place into a 250 degree oven for 2 hours or until meat it thoroughly cooked.
Remove roast from pan and cover to rest. After 10 minutes, slice meat into thin pieces and build sliders with desired ingredients. Serve.
