An easy and delicious make ahead salad! This is made with a precooked grain mix from Costco, that light Olive Garden salad dressing I love and a ton of veggies. Really filling with balanced carbs, fats and protein, too! Love this one.

Ingredients
2packagesSeeds of Change Quinoa and Brown Rice with Garlic(precooked from Costco)
2light mozzarella cheese sticks(I used Frigo)
12sliceslight salamicut into bite size pieces (I used Gallo)
3ozcooked boneless, skinless chicken breastcut into bite size pieces (I used Fresh Additions)
1/4cupfat free feta cheese
1wholeroma tomatodiced
1wholegreen bell pepperdiced
2scallionschopped
1/2cuplight Olive Garden Salad Dressing
Instructions
Heat grains in microwave according to package directions. Add to a large mixing bowl to cool slightly.
Chop remaining ingredients and add to the quinoa and brown rice. Divide into four equal portions and serve or store in refrigerator for up to 4 days.
