When you need a comforting dinner or a great make-ahead, protein-rich meal, these mini meatloaves are the best! Made with extra lean ground beef and baked with sugar free ketchup to keep the carbs low.
Preheat oven to 375 degrees. Line a half sheet pan or cookie sheet with sides with foil and spray with nonstick cooking spray. Set aside.
In a large bowl, mix ground beef together with onion, Worcestershire sauce, bread crumbs, ketchup, egg, milk, onion powder, garlic powder, salt and pepper.
Divide into 9 even portions (I used an ice cream to portion evenly), form into mini meatloaves and place onto prepared baking sheet. Spread a heaping tablespoon of sugar free ketchup over each meatloaf and bake 25-30 minutes or until the centers reach an internal temperature of 165 degrees F. Serve warm.
