In a large bowl, preferably that of a stand mixer fitted with a dough hook, stir yeast and honey into warm water. Sit for 5-10 minutes or until bubbles form and mixture starts to foam. This tells you that the yeast is alive and kicking.
Pour in salt, olive oil and half the flour - and mix. Once that flour is incorporated, start adding flour in bit by bit until you get the pizza dough to the consistency you want: slightly tacky, but when you touch it, it doesn't stick to your hands.
Once you reach this stage, knead on low for 6 minutes. The dough should be smooth and easy to work with. And the bowl should be mostly clean!
Lightly grease the bowl & the dough so it doesn't dry out, cover with plastic wrap and let it rise 1-2 hours or until doubled in size.
Once pizza dough has risen, remove from bowl and set on a clean, lightly floured counter.
for the bubble pizza-
Preheat oven to 375° F. Line a baking sheet with parchment paper and lightly spray with nonstick cooking spray. Set aside.
Cut pizza dough into quarters and then each quarter into 8, so you end up with 32 small dough pieces. Arrange randomly on baking sheet, in a circle - leaving about 1/4-1/2 inch between each dough piece so they have room to expand.
Spoon and spread pizza sauce over dough, top with cheese, pepperoni, and any other toppings you'd like. Sprinkle with Italian seasoning.
Bake 15 minutes or until the dough is cooked completely (especially in the center!) Serve warm.
To eat, use your fingers (or a fork) to "pull-apart" the individual "bubbles" of pizza. So fun!
