Macro Friendly Buttermilk Waffles

I love a good waffle so with this recipe, I tried to add in a few extra ingredients to increase the protein without drying them out completely or them turning too soggy or crispy. This recipe makes five Belgium Waffles that are pretty large, so feel free to only eat half a waffle.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup plain Whey Protein I used Bob's Red Mill
  • 1/4 cup Buttermilk Powder I used Saco brand
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon truvia
  • 2 tablespoons melted butter
  • 1 whole egg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 1/2 cups cold water

Equipment

  • Belgium Waffle Maker

Instructions

  • Preheat Belgian Waffle Iron.
  • In a large bowl, whisk flour, whey protein, buttermilk powder, baking powder, baking soda, salt and truvia. Create a well in the center and add in remaining ingredients. Whisk until a smooth batter forms.
  • Spray hot waffle iron with nonstick cooking spray and pour in 2/3 cup waffle batter into the center. Cook until the waffle is as soft or crispy as you'd like.
  • Serve with sugar free syrup.
