This warm parmesan chicken sandwich is pretty tasty and really doesn’t require a whole lot of time or attention.
I’ve turned into the queen of fast dinners. Mainly because I’m running a 1-woman empire of a business I’m taking care of my two other kids I’m too busy napping growing a human is exhausting.
I’ve blamed pregnancy for a lot of things. Some truthful. Some slightly untruthful.
But this quick meal was created 100% because I was too tired to make anything else {because all of my bodily resources were being diverted to my ever-growing child.}
Aaaaaand because I didn’t have any more frozen pot pies.
{Yes, I eat those.}
Anyways…
These warm parmesan chicken sandwiches are pretty darn tasty and really don’t require a whole lot of time or attention. Also, really easy for certain 6-year olds to make too.
They are the perfect weeknight meal that you won’t have to convince your kids to eat. This and a salad is what we had last week and it hit the spot. Also: we had extras, so hooray for that!
Here’s how to make these:
This ingredients list is pretty straight forward: chicken, parmesan cheese, mayo, plain greek yogurt and mojito lime seasoning.
And before you all jump down my throats again, YES I USE CANNED CHICKEN. I promise we can co-exist happily together on this planet with you hating canned chicken and me not wanting to wash another salmonella covered cutting board because I chose to use fresh chicken.
Now, a word about mojito lime seasoning: I got this beauty at costco and throw it into everything. It’s delicious. That is all.
Mix everything up together and that’s the sandwich filling.
Now you can grab some soft dinner rolls {I used whole wheat ones} and slice in half.
Schmear a little of this veggie cream cheese on the bottom half of each roll and rejoice.
My recent veggie cream cheese addiction in completely pregnancy related. Feel free to leave this out completely. It’s optional. Except in my world.
Where were we? Ah, yes. Spread the bottoms of each roll with that cream cheese, then top with a generous amount of chicken filling.
Bake for a few minutes to warm everything through and melt the cheese. Then serve with whatever you have lying around. Salad, frozen veggies, veggies and dip, leftover halloween candy…to each his own.

These were a hit! I’m now the owner of a large container of Mojito Ljme seasoning. What other recipes do you have that use it?

Made this last night and they were super yummy! Used TJ’s Everything but the Bagel seasoning (could not find that Mojito Lime) and they were to die for, another hit in our house thanks to you!!
Can I use this filling with other things Lauren instead of bread rolls?

I finally made these today and they were so delish! Initially I couldn’t find the seasoning, but did finally find it as a marinade packet.
lmbo “halloween candy…to each his own” <3 your site
🙂 🙂 🙂
Made this for me and fiancé yesterday as an easy fix lunch. It was absolutely delicious. Could not find the mojito lime seasoning but had some montreal chicken seasoning lying around so I decided to sprinkle a little bit of that. Turned out really well. We both loved it. So glad I stumbled upon this recipe.
Raining in Dallas and needed some fast comfort food. Shared this with a friend today but had to make some substitutions (no greek yogurt & used Baja Citrus Grill Mates). It was great but look forward to the arrival of my Mojito Lime seasoning. Can’t wait to make for my son as it is perfectly delicious for a college student.
I made these tonight for my picky eater husband and toddler and they loved it! I subbed ciabatta and added tomato and romaine (after baking). So good! I want to try adding a little chopped onion next time.
I was planning on making for dinner, can’t find seasoning, what should I use instead?
Love your canned chicken comment. I’m not a fan of cutting up fresh chicken either. Usually just by cooked roaster chicken. These look good and easy! Thanks!
Simple and quick! My kind of recipe 😉
Growing a human is EXHAUSTING!!!! So no problem here with fast, easy and delicious meals!!! These sound wonderful and can’t wait to try them out!
Why can’t I pin this to my pintrest board??
Who in the WORLD would gripe at you for using canned chicken?! People need to get a hobby. 🙂 These look amazing, and I will be making them soon. Seeing as I am 26 weeks preggo myself, I TOTALLY feel you on the exhaustion front.
Ha that is too funny. I have absolutely changed my dinner menu plans after coming home from work and refusing to deal with raw chicken and the dreaded contaminated cutting board. These look great!
Wow, these look really, really good! I’ve never seen that seasoning before, but I’ll have to keep my eyes open for it.
These look delicious! Need to make these soon. But I tried to find that mojito lime seasoning (from another recipe you posted) and couldn’t find it anywhere, not even on their website. Did you get it in the beginning of summer?
I think I may have gotten it mid summer? Try Amazon!
Hi, I live in South Africa. We do not have tinned chicken – should I just use shredded chicken breasts? How many would you suggest per can? Also I have not seen the spice yet- any idea’s ? Fresh Lime Juice or peel?
Thanks h
Pinned! Sounds yummy! And thanks for your humor! Makes for a great day. And by saying that….I think I’ll have some Halloween candy for breakfast..LOL
Looks awesome! I’m all for easy!
Pinned and scheduled to share with my Facebook readers!
I love easy weeknight meals so much…and I’m not even pregnant:-). This sounds delicious and I know my kids would eat these up – they love anything in sandwich form for dinner I am finding.
Pregnancy can be so tiring, I had 3 children in 4 years, I look back and think – how did I have the energy?! These chicken Parmesan melts are a perfect quick meal and look absolutely delicious. Thank you for the recipe and I wish you the very best for the rest of your pregnancy.
