This warm parmesan chicken sandwich is pretty tasty and really doesn’t require a whole lot of time or attention.

I’ve turned into the queen of fast dinners. Mainly because I’m running a 1-woman empire of a business  I’m taking care of my two other kids  I’m too busy napping growing a human is exhausting.

I’ve blamed pregnancy for a lot of things. Some truthful. Some slightly untruthful.

But this quick meal was created 100% because I was too tired to make anything else {because all of my bodily resources were being diverted to my ever-growing child.}

Aaaaaand because I didn’t have any more frozen pot pies.

{Yes, I eat those.}

Anyways…

These warm parmesan chicken sandwiches are pretty darn tasty and really don’t require a whole lot of time or attention. Also, really easy for certain 6-year olds to make too.

They are the perfect weeknight meal that you won’t have to convince your kids to eat. This and a salad is what we had last week and it hit the spot. Also: we had extras, so hooray for that!

Here’s how to make these:

This ingredients list is pretty straight forward: chicken, parmesan cheese, mayo, plain greek yogurt and mojito lime seasoning.

And before you all jump down my throats again, YES I USE CANNED CHICKEN. I promise we can co-exist happily together on this planet with you hating canned chicken and me not wanting to wash another salmonella covered cutting board because I chose to use fresh chicken.

Mojito Lime Seasoning

Now, a word about mojito lime seasoning: I got this beauty at costco and throw it into everything. It’s delicious. That is all.

Chicken Parmesan Melt Mixture

Mix everything up together and that’s the sandwich filling.

Buns

Now you can grab some soft dinner rolls {I used whole wheat ones} and slice in half.

Garden Vegetable Cream Cheese

Schmear a little of this veggie cream cheese on the bottom half of each roll and rejoice.

My recent veggie cream cheese addiction in completely pregnancy related. Feel free to leave this out completely. It’s optional. Except in my world.

Where were we? Ah, yes. Spread the bottoms of each roll with that cream cheese, then top with a generous amount of chicken filling.

Chicken Parmesan Melts

Bake for a few minutes to warm everything through and melt the cheese. Then serve with whatever you have lying around. Salad, frozen veggies, veggies and dip, leftover halloween candy…to each his own.

Easy Chicken Melts

This warm parmesan chicken sandwich is pretty tasty and really doesn't require a whole lot of time or attention.

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 24.5 oz chicken two 12.25 oz cans, drained
  • 1/4 cup plain greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon mojito lime seasoning
  • 6 tablespoons vegetable cream cheese
  • 12 small soft dinner rolls sliced in two

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, place chicken, yogurt, mayonnaise, cheese and mojito lime seasoning. Stir together to combine. Taste and adjust seasonings.
  • Spread the bottom of each roll with about 1/2 tablespoon veggie cream cheese. Top with chicken and parmesan mixture and top with top part of bun.
  • Bake 10 minutes to crisp the outsides of the rolls but melt the cheese and warm the chicken filling. Remove and serve immediately.

    Made this for me and fiancé yesterday as an easy fix lunch. It was absolutely delicious. Could not find the mojito lime seasoning but had some montreal chicken seasoning lying around so I decided to sprinkle a little bit of that. Turned out really well. We both loved it.     I made these tonight for my picky eater husband and toddler and they loved it! I subbed ciabatta and added tomato and romaine (after baking). So good! I want to try adding a little chopped onion next time.

    Hi, I live in South Africa. We do not have tinned chicken – should I just use shredded chicken breasts? How many would you suggest per can? Also I have not seen the spice yet- any idea’s ? Fresh Lime Juice or peel?
