BLT Chopped Salad is full of healthy delicious vegetables. The basil Greek goddess dressing makes it a lunch to remember.
There’s a new craving I’ve been having these last few weeks. Nothing wonky or totally nuts or anything…just for salad! How convenient considering I’ve gained a lot of weight this pregnancy lots of people are looking for new and healthy recipes for their new years resolutions {…not that bacon and blue cheese are healthy options, but there’s KALE!}
I’m in the very last stages of this pregnancy {2 weeks left!!!} and besides feeling nauseous from time to time, I crave NOTHING. Bowls of plain cheerios with unsweetened almond milk are where it’s at these days. That and toast. And maybe a grapefruit.
I’m a simple gal, really.
Except for this last week when all I wanted was salad. I made this Falafel Salad Bowl and devoured that in no time and then used every veggie in my fridge to dip into this homemade ranch and then I made this little gem of a lunch: BLT Chopped Salad with Basil Greek Goddess Dressing. Bacon in anything is basically a slam dunk in my book, but this dressing……YOU GUYS! Just hook me up to the IV and walk away. The creamy-garlicky-basily situation happening with all the chopped goodies in the salad were making me never want to eat anything but this salad for the rest of time. If I were to marry a salad, this would be the lucky winner.
If loving salad is wrong, I don’t want to be right.
I cannot put into words how much I crave this salad now and how freaking good it is besides just saying I CRAVE THIS SALAD and IT’S SO FREAKING GOOD.
So, there you have it. Another salad recipe. That I may have a slight obsession with. That I eat pretty regularly. That I hog all to myself. Totally normal.
Here’s how to make it:
So, this glorious dressing has very few and very simple ingredients: mayonnaise, lemon juice, garlic, salt, pepper and lots of chopped fresh basil.
Stir this up and that’s the dressing. It’s DREAMY.
The veggies I used in the salad were: baby kale, cherry tomatoes, red onion and some orange bell peppers. This is just some of the stuff I had in my fridge. Feel free to add in whatever veggies you like! Throw everything onto a big cutting board and kung-fu-karate-chop the heck out of it to make this a CHOPPED salad. I also added in bacon and some blue cheese for good luck.
Blue cheese brings good luck, doesn’t it? Pretty sure that’s how it goes.
SO! Toss this all together with the dressing and voila! A salad that dreams are made of.
Pile this onto a nearby plate and enjoy! I gave my husband approximately 3/4 of a proper bite and saved the rest for myself because I’m selfish the baby needs nourishing, vitamin packed bacon vegetables.

BLT Chopped Salad with Green Goddess Dressing
Ingredients
- 3 cups chopped baby kale/spinach mix
- 1/2 cup chopped tomatoes
- 6 small slices bacon cooked & crumbled
- 1/4 cup chopped yellow bell peppers
- 2 tablespoons chopped red onion
- 3 tablespoons blue cheese
dressing:
- 1/4 cup real mayonnaise
- 2 tablespoons lemon juice
- 6 large basil leaves chopped finely
- 1 small clove garlic finely minced
- salt & pepper to taste
- 1 tablespoon water
Instructions
- Add all ingredients for salad to large bowl.
- In separate smaller bowl, stir dressing ingredients together until combined. Toss dressing with salad and serve immediately.
I want to make this for five people…what would be the best way to adjust the dressing ingredients?
I’m not a fan of blue cheese, would an alternate cheese work better?

I made this for dinner tonight and it was so GOOD! Perfect use of the basil I’m growing this summer.

Nothing will give you the bacon taste quite like bacon. I’d try a grilled chicken or really crispy turkey bacon.
It’s a bacon lettuce and tomato salad..
I love love love this salad. I add shrimp or chicken and make it a main dish meal. Yumm !
Can you use a different cheese other than blue cheese?
