Once upon a time in a land far far away, I used to hate honey mustard chicken. Well, honey mustard anything really.

A little bit of a strange thing to hate, but whatever. Please love me anyway.

Then once upon a girls’ trip to Florida, I was stuck in the Atlanta airport for hours and hours so I ordered a salad with Italian dressing. Say it with me: ITALIAN DRESSING.

So I got my salad {which happened to come with the tastiest mini croissants in the world} and walked all the way back to my gate to thoroughly enjoy my salad with, you guessed it, Italian dressing.

Well, to my shock and horror, I was given honey mustard dressing.

Surely you saw that coming.

ANYWAYS, I was too lazy tired to go back to the restaurant to exchange it for what I wanted so I ate my salad plain. Literally dry lettuce. With probably a little chicken thrown in there too. Eventually, this got to be too much to handle so I gave in out of desperation and tried the honey mustard dressing.

You guys. It was good. REALLY GOOD. I was completely caught off guard.

Sweet honey mustard, where have you been all my life? Right in front of my face.

If you’re checking dates with that blog post, this whole event happened *nearly* a year ago. So, for 29 long years, I’ve lived without this. I am kinda super sad about it, but at the same time so happy to have discovered it.

So, the moral of the story is desperation pays off.

And yes, I’m honey-mustarding all the things.

So, this chicken and bacon dinner has been honey-mustarded and I don’t even know what to do with myself. ILOVEITSOMUCH!!!

If honey-mustarding all the things is wrong, I don’t want to be right.

This dinner comes together in about 30 minutes. It’s a super simple dish you bake in the oven and then serve over rice. Kind of a humble dish, but one that will make you like honey mustard too. If you don’t like sweeter dinners, feel free to reduce the honey amount by half.

Baked Honey Mustard Chicken

Baked Honey Mustard Chicken topped with bacon is a sweet and tangy delight. Serve with rice and enjoy all the honey mustard gloriousness.

Ingredients

  • 4 slices hickory smoked bacon
  • 1/4 cup dijon mustard
  • 1/2 cup honey
  • 1/2 teaspoon dried rosemary NOT ground
  • 2 chicken breasts cut into 1-inch pieces
  • 1 1/2 tablespoons butter
  • salt & pepper to taste
  • dried chives for garnish, optional

Instructions

  • Preheat oven to 375 degrees.
  • In a small skillet, cook bacon until crisp. Remove to drain and crumble. Set aside.
  • In a 9x9 glass baking dish, stir mustard, honey, rosemary, chicken, salt and pepper together until well mixed. Dot the top with butter and bake 20 minutes. Remove from oven, stir, top with cooked bacon and bake another 5 minutes. Stir again, top with chives and serve over rice.

    I made your Creamy Ranch Chicken Casserole. It was really, really good. One question, the 1oz Ranch Seasoning Packet. The package is 1oz in weight, but 1 tablespoon is also 1oz. Which one is correct???

    I love this… with a couple small changes. I don’t like it as sweet so I use half as much honey and I like the sauce a little thicker so before baking for 5 more mins I add a tbsp or two of cornstarch mixed with water and when its done baking it’s nice and thick to go over the rice. My family likes it too 🙂 Thank you!

Then a couple months ago, while watching calories, I found a grilled honey mustard chicken and it rocked my world!
