Macro Friendly Corn & Avocado Salsa

This is the best way to use up those fat grams! Charred sweet corn that stays crunchy is the perfect addition to ripe avocado, fresh tomatoes, jalapenos, lime juice and cilantro! So delicious topped onto meat or with chips or just by itself. YUM!

Ingredients

  • 2 ears Sweet Corn
  • 2 On the Vine Tomatoes
  • 2 small Haas Avocados
  • 1/2 jalapeno pepper finely chopped
  • 1 lime juiced
  • 1/4 cup cilantro chopped
  • salt & pepper to taste

Instructions

  • Shuck corn. Optional step: Place raw corn onto hot grill to char OR place onto gas grill grates to char. Cool slightly, then cut off kernels. Place into a mixing bowl.
  • De-seed tomatoes, then chop into large pieces. Add to bowl. Cut avocados into large pieces and add with jalapeno, lime juice, cilantro, salt and pepper.
  • Gently toss everything together and serve OR refrigerate covered and serve cold. Delicious alone, with chips or with grilled meat.
