Macro Friendly Corn & Avocado Salsa
- 2 ears Sweet Corn
- 2 On the Vine Tomatoes
- 2 small Haas Avocados
- 1/2 jalapeno pepper finely chopped
- 1 lime juiced
- 1/4 cup cilantro chopped
- salt & pepper to taste
- Shuck corn. Optional step: Place raw corn onto hot grill to char OR place onto gas grill grates to char. Cool slightly, then cut off kernels. Place into a mixing bowl.
- De-seed tomatoes, then chop into large pieces. Add to bowl. Cut avocados into large pieces and add with jalapeno, lime juice, cilantro, salt and pepper.
- Gently toss everything together and serve OR refrigerate covered and serve cold. Delicious alone, with chips or with grilled meat.
